  2. Sauté Onion and Garlic: Add the onion and garlic, stirring until the onion becomes translucent.
  3. Add Vegetables: Stir in the carrots, celery, potato, and bell pepper, cooking for a few minutes.
  4. Add Broth: Pour in the vegetable broth (or water) and bring to a boil.
  5. Add Broccoli: Once boiling, add the broccoli, reduce heat, and simmer for 20-25 minutes until vegetables are tender.
  6. Season: Stir in salt, pepper, and dried herbs.
