Ingredients:

  • Pasta: 500 grams
  • Peas: 1 cup
  • Broccoli: 1 cup
  • Carrot: 1 cup (diced)
  • Red Bell Pepper: 1 medium (diced)
  • Yellow Bell Pepper: 1 medium (diced)
  • Green Bell Pepper: 1 medium (diced)
  • Mayonnaise: 6 tablespoons
  • Mustard: 1 tablespoon
  • Olive Oil: ½ tablespoon
  • Vinegar: 3 tablespoons
  • Oregano: 2 teaspoons
  • Dried Basil: 2 teaspoons
  • Salt: to taste
  • Black Pepper: to taste

Instructions:

  1. Cook the pasta until al dente, then let it cool.
  2. In a pot, boil the peas and diced carrots until tender. Drain and set aside to cool.
  3. In a large bowl, combine the cooled pasta, peas, carrots, and diced bell peppers.
  4. In a small bowl, mix the mayonnaise, mustard, olive oil, and vinegar until smooth. Season with salt and black pepper.
  5. Pour the dressing over the pasta salad and toss gently to combine.
