Potato Soup |
Ingredients:
- 3 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- A pinch of nutmeg (optional)
- Chopped parsley for garnish
Instructions:
- Heat the Oil: In a large pot, heat the olive oil over medium heat.
- Sauté Onion and Garlic: Add the onion and sauté until translucent, then add the garlic and cook for an additional minute.
- Add Potatoes and Broth: Add the diced potatoes and vegetable broth. Bring the mixture to a boil.
- Cook: Reduce the heat, cover the pot, and cook for 20-25 minutes until the potatoes are tender.
- Blend: Using an immersion blender, blend the soup until smooth. (You can also use a regular blender, but be cautious.)
- Add Milk or Cream: Stir in the milk or cream (if using) and mix well. Heat the soup again for a few minutes until warm.
- Serve: Season with salt, pepper, and nutmeg to taste, and garnish with chopped parsley.
