Ingredients:

  • 1 can (400 grams) crushed tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or Italian herbs
  • Juice of half a lemon
  • Chopped parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion becomes translucent.
  3. Add the carrots, zucchini, potato, and bell pepper, and stir for a few minutes.
  4. Add the crushed tomatoes and vegetable broth. Bring the soup to a boil.
  5. Reduce the heat, cover the pot, and let it simmer for 20-25 minutes until the vegetables are tender.
  6. Season the soup with salt, pepper, and thyme. Stir in the lemon juice.
  7. Serve the soup garnished with chopped parsley.
