Recipe for Soup |
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 potato, diced
- 1 bell pepper (any color), chopped
- 1 can (400 grams) crushed tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 teaspoon dried thyme or Italian herbs
- Juice of half a lemon
- Chopped parsley for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion becomes translucent.
- Add the carrots, zucchini, potato, and bell pepper, and stir for a few minutes.
- Add the crushed tomatoes and vegetable broth. Bring the soup to a boil.
- Reduce the heat, cover the pot, and let it simmer for 20-25 minutes until the vegetables are tender.
- Season the soup with salt, pepper, and thyme. Stir in the lemon juice.
- Serve the soup garnished with chopped parsley.
Tips:
- Feel free to add any vegetables you like or have on hand.
- This soup can be served with toasted bread or rice.
