Rice with Nuts
Ingredients:
- 2 cups basmati rice
- 4 cups water
- 1 small onion, chopped
- 2 tablespoons vegetable oil or ghee
- 1/2 cup sliced almonds
- 1/2 cup pistachios, chopped
- 1/4 cup raisins (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon (optional)
Instructions:
Prepare the Rice: Rinse the rice thoroughly under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
Toast the Nuts: In a pot over medium heat, heat the oil or ghee. Add the almonds and pistachios and stir until they are lightly toasted. If using, you can add the raisins at this stage. Remove the nuts from the pot and set aside.
Sauté the Onion: In the same pot, add the chopped onion and sauté until it becomes translucent and golden.
Cook the Rice: Add the soaked rice to the pot along with salt, pepper, and cinnamon. Stir the rice for about a minute, then add the water.
Simmer: Once the water comes to a boil, reduce the heat to low, cover the pot, and let it cook for 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Serve: After the rice is cooked, let it sit covered for 5 minutes, then fluff it with a fork. Serve the rice on a plate and top it with the toasted nuts.
