Instructions

1. Prepare the Dough:

  • In a large bowl, combine the flour, yeast, sugar, and salt.

  • Knead the dough on a floured surface for about 5-7 minutes until smooth.

2. Prepare the Filling:

  • Heat a little olive oil in a large skillet over medium heat.
  • Add the chopped onion, bell peppers, grated carrots, and minced garlic.
  • Sauté until the vegetables are tender and the onion is translucent, about 10 minutes.
  • Stir in the chopped olives, fresh coriander, salt, black pepper, and a splash of soy sauce. Mix well.
  • Allow the filling to cool slightly.

3. Assemble the Pastries:

  • Punch down the risen dough and divide it into small balls.
  • Roll out each dough ball into a flat circle on a floured surface.
  • Place a spoonful of the vegetable filling in the center of each circle.
  • Fold the dough over the filling to form a half-moon shape and seal the edges by pinching them together.
  • Place the stuffed pastries on a baking sheet lined with parchment paper.
  • Brush the tops with beaten egg yolk for a golden finish.

4. Bake:

  • Preheat your oven to 180°C (350°F).
  • Bake the pastries for about 20-25 minutes, or until golden brown and crispy.
  • Allow to cool slightly before serving.
