Ingredients

  • 500 g flour (preferably wheat flour)
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 200 ml warm water (can adjust as needed)
  • 100 ml oil (for layering)
  • 50 g melted butter (optional)

Steps

Preparing the Dough:

  1. In a large bowl, mix the flour with the salt and sugar.
  2. Gradually add the warm water and knead until you obtain a smooth and firm dough.
  3. If the dough is sticky, you can add a little more flour.

Shaping the Dough:

  1. Cover the dough with plastic wrap or a cloth and let it rest for 30 minutes.
  2. After resting, divide the dough into small balls (about the size of a tennis ball).

Layering the Dough:

  1. Take one ball of dough and roll it out with oil until it becomes very thin.
  2. You can add a layer of melted butter between each layer for a flaky texture.

Assembling:

  1. After rolling out the dough, fold the edges to form a square, and repeat the process with the remaining balls.

Cooking:

  1. Place the dough in a hot pan and cook each piece over medium heat, flipping until browned on both sides.

Tips

  • Make sure the oil is hot before adding the dough for a crispy texture.
  • You can store any leftover dough in the refrigerator for later use.

    • 3 zucchini
    • Msamen dough
    • Oil for layering

    3. Fold the dough into a square, then roll it out slightly again.
    4. Cook the msamen in a hot pan, flipping continuously until browned on all sides.
    Serving:
    1. Serve the msamen hot with Moroccan tea.
