Ingredients:

- 2 cups flour
- 1/2 cup olive oil
- 1/2 cup warm water
- 1 teaspoon salt
- 1 teaspoon instant yeast

- 1 bell pepper (red or green), chopped
- 2 tablespoons olive oil

Instructions:
1. Prepare the Dough:
- In a bowl, mix the flour with salt and yeast.
- Add the olive oil and mix well.
- Gradually add the warm water and knead until a smooth dough forms. Let it rise for 30 minutes.
2. Prepare the Filling:
- In a skillet over medium heat, heat the olive oil.
- Add the onion and sauté until softened.
- Add the carrot, zucchini, and bell pepper. Stir for 5-7 minutes until the vegetables are tender.
- Season with salt, pepper, and cumin (if using). Let the filling cool.
3. Shape the Pies:
- Once the dough has risen, divide it into small balls.
- Roll each ball into a thin circle.
- Place a spoonful of filling in the center of each circle, fold it over, and press the edges to seal.
4. Cooking:
- Heat a skillet over medium heat. You can brush it with a little oil.
- Cook the pies for 3-4 minutes on each side until golden and crispy.
