vegetable soup |
Ingredients:
- 2 tablespoons olive oil
- 1 chopped onion
- 2 cloves minced garlic
- 2 carrots diced
- 2 zucchinis diced
- 1 large potato diced
- 1 red bell pepper chopped
- 4 cups vegetable broth or water
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
- Lemon juice (optional)
- Chopped parsley for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until the onion is translucent.
- Add the carrots, zucchini, potato, and bell pepper; stir for 5 minutes.
- Pour in the broth (or water) and bring the soup to a boil.
- Reduce the heat and let it simmer for 20-25 minutes until the vegetables are tender.
- Taste the soup and add salt, pepper, and thyme as desired.
- You can add lemon juice for extra flavor.
- Serve the soup in bowls garnished with chopped parsley.
Tips:
- Feel free to add any vegetables you like, such as broccoli or spinach.
- Serve the soup with French bread or toast.
