Vegetable Soup |
Ingredients:
- 1 cup peas
- 1 cup green beans
- 4 zucchini, chopped
- 1 potato, diced
- 2 tomatoes, chopped
- 1 onion, finely chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 2 carrots, chopped
- 100 grams orzo pasta
- 1 teaspoon mixed spices
- 1 teaspoon cumin
- 1 teaspoon black pepper
- Salt to taste
- Hot water as needed
Instructions:
Prepare the Orzo:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until softened.
- Add the orzo pasta and stir continuously until it turns golden brown.
Add the Garlic:
- Add the minced garlic to the onion and orzo mixture, stirring for about a minute until fragrant.
Add the Vegetables:
- Add the diced potato and chopped carrots to the pot, stirring for 3-4 minutes.
- Then, add the green beans, peas, tomatoes, and zucchini, and mix well.
Season and Add Water:
- Stir in the mixed spices, cumin, black pepper, and salt.
- Pour in enough hot water to cover all the ingredients.
Cook:
- Cover the pot and let the soup simmer over medium heat for 10 to 15 minutes, or until the vegetables and orzo are fully cooked.
Serve:
- Once everything is cooked, remove from heat and serve the soup hot.
Note:
You can add more water if you prefer a thinner soup consistency
