Vegetable Soup

Ingredients:

  • 1 cup peas
  • 1 cup green beans
  • 4 zucchini, chopped
  • 1 potato, diced
  • 2 tomatoes, chopped
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 2 carrots, chopped
  • 100 grams orzo pasta
  • 1 teaspoon mixed spices
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • Salt to taste
  • Hot water as needed

Instructions:

  1. Prepare the Orzo:

    • In a large pot, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until softened.
    • Add the orzo pasta and stir continuously until it turns golden brown.
  2. Add the Garlic:

    • Add the minced garlic to the onion and orzo mixture, stirring for about a minute until fragrant.
  3. Add the Vegetables:

    • Add the diced potato and chopped carrots to the pot, stirring for 3-4 minutes.
    • Then, add the green beans, peas, tomatoes, and zucchini, and mix well.
  4. Season and Add Water:

    • Stir in the mixed spices, cumin, black pepper, and salt.
    • Pour in enough hot water to cover all the ingredients.
  5. Cook:

    • Cover the pot and let the soup simmer over medium heat for 10 to 15 minutes, or until the vegetables and orzo are fully cooked.
  6. Serve:

    • Once everything is cooked, remove from heat and serve the soup hot.

Note:

You can add more water if you prefer a thinner soup consistency
