Lentil Kofta Curry

Lentil Kofta Curry is a flavorful dish that combines lentil-based koftas (small patties or balls) with a rich, spiced curry sauce. This plant-based dish is hearty, satisfying, and perfect for those who enjoy Indian or Middle Eastern flavors.

Ingredients:

For the Kofta:

  • 1 cup lentils (red, green, or brown)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 2 tbsp flour (for binding)
  • 2 tbsp oil (for frying or baking)
  • Fresh coriander or parsley, chopped (optional)

For the Curry Sauce:

  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp chili powder (optional)
  • 1 can coconut milk or 1/2 cup yogurt (for creaminess)
  • Salt and pepper to taste
  • Fresh coriander for garnish

Instructions:

  1. Prepare the Kofta:

    • Cook the lentils in water until soft (about 15-20 minutes), then drain well.
    • Mash the lentils and mix with the chopped onion, garlic, cumin, coriander, turmeric, salt, pepper, and flour.
    • Form the mixture into small balls or patties.
    • Fry the koftas in oil until golden brown, or bake them in a preheated oven at 180°C (350°F) for about 20 minutes, turning halfway through.
  2. Make the Curry Sauce:

    • In a pan, heat oil and add cumin seeds until they crackle.
    • Add the chopped onion, garlic, and ginger, and sauté until the onion turns golden.
    • Stir in the pureed tomatoes, turmeric, coriander powder, chili powder, and salt. Cook until the oil starts separating from the sauce (about 5-7 minutes).
    • Pour in the coconut milk or yogurt and let it simmer for another 5 minutes. Adjust salt and spice levels to taste.
    • Add garam masala at the end for extra flavor.
  3. Combine:

    • Add the fried or baked koftas to the curry sauce and let them simmer for 5-10 minutes so they can absorb the flavors of the curry.
    • Garnish with fresh coriander.
  4. Serve:

    • Serve hot with rice, naan, or any flatbread of your choice.
