Ingredients:
- 1 cup flour
- 1 cup milk
- 2 eggs
- 1 tablespoon melted butter or oil
- A pinch of salt
- Mixed vegetables (such as bell pepper, carrot, zucchini, onion, tomato, spinach)
- Grated cheese (optional)
- Spices to taste (like black pepper, thyme, paprika)
Instructions:
Prepare the Crepe Batter:
- In a bowl, mix the flour, milk, eggs, butter (or oil), and salt until you have a smooth, liquid batter.
- Let the batter rest for 10-15 minutes.
Prepare the Vegetables:
- Chop the vegetables into thin slices or small cubes.
- In a pan, add a little oil and sauté the vegetables until they’re tender.
- Season with spices to taste, then set aside to cool slightly.
Cook the Crepes:
- In a non-stick pan, add a little oil or butter and heat over medium heat.
- Pour a small amount of the batter into the pan, spreading it thinly to cover the surface.
- Cook until the edges start to brown, then flip and cook the other side.
Add the Filling:
- Place a little of the cooked vegetables and grated cheese (if desired) on one half of the crepe.
- Fold the crepe over the filling and let it cook briefly until the cheese melts.
Serve:
- Remove the crepe from the pan and serve hot.
