Ingredients:
- 1 cup corn
- 1 small potato, diced
- 1 small onion, chopped
- 1 garlic clove, minced
- 3 cups water or vegetable stock
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
- Heat oil in a pot, add onion and garlic, and sauté until translucent.
- Add the potato and corn, and cook for 2 minutes.
- Pour in water or stock and simmer until the potato is tender.
- Blend the soup partially using an immersion blender for a creamy texture.
- Add paprika, salt, and pepper, then serve hot
