Ingredients: 

  • 6 slices of toast bread
  • 1 tomato, diced
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 small onion, finely chopped
  • 1 cup of yogurt
  • Semolina
  • 1/2 cup of shredded cheese (optional)
  • 2 tablespoons of olive oil
  • Salt and black pepper to taste
  • Dried thyme or basil for garnish

Instructions:

  1. In a mixing bowl, combine the tomato, red bell pepper, green bell pepper, onion, yogurt, semolina, and shredded cheese (if desired).

    • Add salt, black pepper, and thyme or basil. Mix well until everything is evenly blended.
  2. Lightly brush the toast slices with olive oil.

  3. Spread tomato sauce evenly over the surface of each toast slice.

  4. Spoon the vegetable mixture over the toast slices, spreading it out evenly.

  5. Preheat the oven to 180°C (350°F).

  6. Arrange the toast slices on a baking tray and bake for 8-10 minutes, or until the edges are golden and crispy.

  7. Serve the toast hot, garnished with a sprinkle of thyme or basil.
