"Sellou" (also known as "Sfouf"

Ingredients:

  • 1 kg all-purpose flour
  • 500 g blanched and roasted almonds
  • 250 g roasted sesame seeds
  • 200 g melted butter
  • 250 g powdered sugar (adjust to taste)
  • 2 tbsp ground cinnamon
  • A pinch of salt
  • 1 tsp ground anise seeds
  • 1 tsp ground mastic gum
  • 150 g natural honey (optional)

Instructions:

  1. Roasting the Flour:

    • In a large skillet, roast the flour over medium heat, stirring continuously, until it turns golden. Let it cool completely.
  2. Roasting the Almonds and Sesame Seeds:

    • Roast the almonds in the oven or on the stovetop until golden brown. Once cooled, coarsely grind them (not too fine).
    • Similarly, roast the sesame seeds until aromatic. You can lightly grind them if preferred.
  3. Mix the Dry Ingredients:

    • In a large mixing bowl, combine the roasted flour, ground almonds, sesame seeds, powdered sugar, cinnamon, anise, mastic gum, and salt.
  4. Incorporate the Wet Ingredients:

    • Gradually add the melted butter to the dry mixture, mixing well. Optionally, add honey for extra sweetness and better texture.
  5. Serving:

    • Place the mixture in a serving dish and decorate with whole almonds or sesame seeds. Store in an airtight container to keep it fresh for a long time.

Tips:

  • Adjust the sugar and honey to your preference.
  • For a unique flavor, you can add a splash of orange blossom water or Moroccan aromatic spices.
