Healthy Dinner Recipe Without Meat or Fish: Stuffed Zucchini with Vegetables and Quinoa
Ingredients:
- 4 medium-sized zucchini.
- 1 cup cooked quinoa.
- 1 small onion, finely chopped.
- 1 grated carrot.
- 1 bell pepper, chopped (any color you prefer).
- 1/2 cup diced tomatoes.
- 1/2 cup parsley or cilantro, chopped.
- 1 teaspoon olive oil.
- Salt and black pepper to taste.
- 1/2 teaspoon cumin or spices of your choice.
Preparation:
- Wash the zucchini and cut them lengthwise, then scoop out the flesh with a small spoon, keeping the shells intact.
- Heat olive oil in a pan over medium heat and sauté the onion until softened.
- Add the carrot, bell pepper, and tomatoes, and stir until slightly cooked.
- Mix in the cooked quinoa, parsley or cilantro, and the chopped zucchini flesh. Season with salt, black pepper, and cumin, and stir well.
- Stuff the zucchini shells with the mixture and place them in a baking dish.
- Add a bit of water to the bottom of the dish, cover with aluminum foil, and bake in a preheated oven at 180°C (350°F) for 20-25 minutes.
- Remove the foil and allow the zucchini to brown slightly for an additional 5 minutes.
