Stuffed Zucchini with Vegetables and Quinoa

 Healthy Dinner Recipe Without Meat or Fish: Stuffed Zucchini with Vegetables and Quinoa


Ingredients:

  • 4 medium-sized zucchini.
  • 1 cup cooked quinoa.
  • 1 small onion, finely chopped.
  • 1 grated carrot.
  • 1 bell pepper, chopped (any color you prefer).
  • 1/2 cup diced tomatoes.
  • 1/2 cup parsley or cilantro, chopped.
  • 1 teaspoon olive oil.
  • Salt and black pepper to taste.
  • 1/2 teaspoon cumin or spices of your choice.

Preparation:

  1. Wash the zucchini and cut them lengthwise, then scoop out the flesh with a small spoon, keeping the shells intact.
  2. Heat olive oil in a pan over medium heat and sauté the onion until softened.
  3. Add the carrot, bell pepper, and tomatoes, and stir until slightly cooked.
  4. Mix in the cooked quinoa, parsley or cilantro, and the chopped zucchini flesh. Season with salt, black pepper, and cumin, and stir well.
  5. Stuff the zucchini shells with the mixture and place them in a baking dish.
  6. Add a bit of water to the bottom of the dish, cover with aluminum foil, and bake in a preheated oven at 180°C (350°F) for 20-25 minutes.
  7. Remove the foil and allow the zucchini to brown slightly for an additional 5 minutes.

Serving:

Serve the stuffed zucchini hot with a side salad or a light soup.
