Ingredients:
For the Dough:
- 3 cups all-purpose flour
- 1/2 cup vegetable oil or olive oil
- 1 tsp salt
- 1 tbsp sugar
- 1 tsp instant yeast
- 1 cup warm water (as needed)
For the Filling:
- 1 cup spinach, finely chopped and lightly sautéed with garlic and olive oil
- 1/2 cup sliced olives
- 1 cup shredded vegan or regular cheese (optional)
- A pinch of dried thyme or basil for flavor
Instructions:
Prepare the Dough:
- Mix the flour, salt, sugar, and yeast in a large bowl.
- Add the oil and rub it into the dry ingredients until crumbly.
- Gradually add warm water while kneading until you get a soft, elastic dough.
- Cover the dough and let it rise for an hour in a warm place.
Make the Filling:
- Heat a small amount of olive oil in a pan, sauté the spinach and garlic until just wilted.
- Mix the spinach with olives and herbs.
Shape the Pastries:
- Divide the dough into equal-sized balls.
- Roll out each ball into a small circle and place a spoonful of filling in the center.
- Fold into your desired shape (crescent, triangle, etc.), sealing the edges well.
Bake:
- Arrange pastries on a baking tray lined with parchment paper.
- Brush the tops with olive oil and sprinkle with sesame seeds if desired.
- Bake in a preheated oven at 350°F (180°C) for 15–20 minutes or until golden brown.
