 Ingredients:

  • 1 pre-made tart crust or homemade savory dough
  • 1 cup chopped spinach
  • 1 grated carrot
  • 1 red bell pepper, chopped
  • 1/2 cup fresh mushrooms, sliced
  • 3 eggs
  • 1/2 cup milk or light cooking cream
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the tart crust in a baking dish and poke holes in the base with a fork. Pre-bake it for 10 minutes until slightly firm.
  3. Heat olive oil in a pan and sauté the spinach, carrot, bell pepper, and mushrooms for a few minutes until softened.
  4. In a mixing bowl, whisk the eggs with milk or cream. Add a pinch of salt and pepper.
  5. Stir the sautéed vegetables into the egg mixture, then pour the filling into the pre-baked crust.
  6. Sprinkle cheese on top if desired.
  7. Bake the quiche in the oven for 20–25 minutes, or until the top is set and golden.
